Breakfast Recipe Idea : Egg 'N Veggie Scramble
4 egg whites, large
1 egg, large
1 cup chopped fresh spinach
1/4 onion chopped
1 T olive oil
4 mushrooms sliced and diced
1/2 to 1 oz shredded mozarella cheese
Heat skillet to medium heat. Add olive oil. Saute your veggies until soft but firm. Add in your seasoning and toss lightly.
While your veggies are cooking, in a medium sized bowl beat egg whites and egg together with a fork.
Add egg mix to your veggies. Move egg mix around with fork. Turn with a spatula to evenly cook egg 'n Veggie Scramble.
When cooked, turn out onto a plate, top with mozzarella cheese. Cover with a lid until cheese is melted.
Serves : 1, if you are me -- maybe 2 if you like to share
